What You’ll Need

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter
  • 2 tablespoons vegetable oil
  • 2/3 cup cold water
  • 4 tablespoons unsalted butter, melted
  • Coarse sea salt
  • Baking sheets
  • Parchment paper
  • Food processor or mixing bowl and pastry cutter
  • Plastic wrap
  • Rolling pin
  • Wire cooling rack
  • Pastry brush
  • Toothpick
  • Cookie cutters or small, sharp knife

What to Do

  • Preheat the oven to 400 degrees
  • Put flour, sugar, baking powder, and 1/2 teaspoon salt in the food processor
  • Pulse to combine
  • Add the cold butter
  • Pulse until the butter breaks down to create a coarse texture. Make sure that the butter is very cold before this step
  • Add the vegetable oil and pulse to combine
  • Turn the food processor onto low speed and gradually drizzle the cold water in through the feed tube
  • Continue to process just until the ball comes together to form a ball
  • Remove the dough from the food processor and wrap tightly in plastic wrap
  • Allow the dough to rest for 10 minutes
  • Lightly flour a flat surface such as a counter or table
  • Roll out the dough as thin as possible, approximately the thickness of a crepe
  • Use the cookie cutters or small, sharp knife to cut the dough into the desired shape. Re-roll any scrapes until all dough has been used
  • Line the baking sheets with parchment paper
  • Transfer the crackers onto the sheets
  • Use the toothpick to poke a series of holes into the crackers to ensure a flat, crispy finish
  • Bake 10 minutes or until nicely golden brown
  • Use the pastry brush to coat each finished cracker with melted butter
  • Sprinkle with the coarse salt immediately to ensure it sticks
  • Transfer the crackers to the wire cooling rack to cool completely. The wire rack will ensure proper air circulation so the crackers are crisp.
