Summer across the nation has shown extremes ranging from extreme heat in many states to severe flooding and tornados. When the heat has you wanting to avoid running the oven or stove, these quick, nutritious summer meals are perfect for your mom.
Quinoa Bowls
Keep cooked quinoa packaged in the freezer. Take a package out to thaw in the morning. When it’s time for dinner, portion the quinoa into a bowl and top with cooked shrimp or canned tuna, chopped cucumber, chickpeas, shredded carrots, and other favorite vegetables.
Drizzle that with a favorite salad dressing or some olive oil and fresh garlic. As you can pick and choose the proteins and vegetables your mom loves, this meal is easily changed into something different each day.
One day could be a Mediterranean-themed quinoa bowl with olives and roasted red peppers, another could be Mexican-themed with shredded chicken, corn, and pico de gallo. Another could be Asian-inspired with pickled ginger, edamame, and roasted sesame oil.
Chef Salad
A chef salad doesn’t need you to do any cooking. Add lettuce or mixed greens to a plate. Top with diced cheese, canned tuna, diced ham, boiled egg, and croutons. Your mom can add her favorite dressing. If she needs to boost her calcium intake, fresh mozzarella is a good source of calcium.
Canned chickpeas are good for fiber and protein. You can also use chickpeas, some tahini, lemon juice, and salt to make homemade hummus to add to a salad.
Cottage Cheese Bowls
Your mom may remember this popular 70s meal. Place a bed of lettuce on a plate and top it with a portion of cottage cheese. Add peas, canned tuna, chopped celery, and diced red onion. Some people mixed everything into the cottage cheese first.

Prepping things like cooked rice, quinoa, and boiled eggs is easily done at night or in the early morning when it’s cooler. Make a large batch and store it in the refrigerator or freezer until it’s needed.
